Testo 106 set (product code 0563 1063) offers a penetration food thermometer together with the TopSafe protective case, developed for fast and accurate measurement of core temperature in food and semi-solid products. It measures in the range −50 … +275 °C; in the range −30 … +100 °C the accuracy is ±0.5 °C, and it takes two measurements per second. The thin Ø2.2 mm measuring tip leaves a small, barely visible hole in the food. When user-defined upper and lower limit values are exceeded, the instrument gives an audible and visual (LED) alarm. The waterproof, dirt-repellent and impact-resistant TopSafe case is dishwasher-safe and brings the instrument to IP67 protection. It is used for fast spot checks in industrial kitchens, catering companies, restaurant chains and food retail.

Fast Core Temperature Checks in the Kitchen and at Goods Receipt

The instrument is operated with few buttons and is ready to measure as soon as you pick it up. The reading can be frozen manually; with Auto Hold on, the value is fixed automatically when it remains stable for the selected period (5, 10, 15 or 20 seconds). The upper and lower alarm limits are set on the instrument; when a limit is exceeded, the alarm indicator on the display and the audible warning are activated. The unit of measurement is set to °C or °F; the instrument switches off automatically if not used for 10 minutes. It runs for approximately 350 hours on CR2032 batteries.

The protective probe cap supplied with the set protects the measuring tip from damage, and the clip allows the instrument to be secured. According to Testo, the instrument together with the TopSafe case complies with the EN 13485 standard and can be used for HACCP-compliant measurements. The housing and probe are cleaned with a damp cloth moistened with soapy water; abrasive cleaners or solvents are not used.

Technician Tips

• Use it with TopSafe fitted: IP67 waterproofing and EN 13485 compliance apply when the instrument is inside the TopSafe case. The case is dishwasher-safe; clean the instrument itself with a damp, soapy cloth.
• Insert at least 15 mm: for an accurate result, immerse or insert the measuring tip at least 15 mm into the product. Continuous contact with food applies to the section from the probe tip up to 1 cm before the handle.
• Set the limit values: define the upper and lower alarm limits on the instrument according to the product group you are inspecting; when a limit is exceeded, the audible warning and alarm indicator are activated.
• Protect the measuring tip: fit the protective probe cap between measurements; the cap protects the tip against impact and damage.
• Have it checked annually: thermometers used under EN 13485 require regular checking and calibration according to EN 13486; once a year is recommended.
