Testo 108-2 Waterproof Food Thermometer – Lockable Type T Thermocouple Probe, −50…+300 °C, IP67, with Protective Case (0563 1082)

Testo 108-2 (product code 0563 1082) is a waterproof food thermometer with a lockable type T thermocouple probe, developed for fast temperature checks in the food sector. The screw-locking probe connection ensures that the probe does not come off the instrument during measurement. The instrument measures in the range −50 … +300 °C (this range applies to metallic probe tips); instrument accuracy is ±0.5 °C in the range −30 … +70 °C, and it takes two measurements per second. With the supplied probe attached, the instrument is IP67 protected and unaffected by moisture and water. The supplied soft protective case protects the instrument from impact and dirt; the probe is carried in the slot on the side of the case. It is used in food transport and storage, large kitchens, restaurant and bakery chains; according to Testo it is HACCP compliant and EN 13485 certified.

Probe Temperature Measurement in Bakeries, Kitchens and the Cold Chain

The instrument is switched on by briefly pressing the button; to switch it off, the button is held for at least 3 seconds. The reading can be frozen manually (Hold), the Auto-hold function holds the last value automatically, and the stored maximum/minimum values can be displayed. The factory settings are unit °C, probe type T and auto-off time 10 minutes; these settings can be changed in the menu. It runs for approximately 2500 hours at +23 °C on 3 AAA batteries. The protective case and probe can be washed under water.

When replacing the probe, standard type T probes with a mini thermocouple plug are used (Testo replacement probe 0602 1081). For an accurate result, the probe must be immersed or inserted at least 22 mm. When the measuring location changes (for example when leaving cold storage), the instrument needs an adjustment time of a few minutes. According to regulation EC 1935/2004, the probe is suitable for continuous contact with food from the tip up to 1 cm before the handle.

Technician Tips

• Attach the probe and lock it: insert the probe plug into its socket and tighten the screw connection; the locked connection prevents the probe from coming off during measurement, and IP67 waterproofing is ensured with the probe attached.
• Insert at least 22 mm: for an accurate result, immerse or insert the probe at least 22 mm into the product and wait until the value stabilizes. Continuous contact with food applies to the section from the probe tip up to 1 cm before the handle.
• Wait when the environment changes: when the instrument is taken to an environment at a different temperature (such as from cold storage to the kitchen), allow a few minutes of adjustment time. Do not leave the housing outside the −20 … +60 °C operating temperature; the −50 … +300 °C range applies only to the metallic probe tip.
• Place the probe in the slot of the case: between measurements, carry the probe inserted in the slot on the side of the soft protective case; the case protects the instrument against impact and dirt.
• Have it checked annually: thermometers used under EN 13485 require regular checking and calibration according to EN 13486; once a year is recommended.
