Testo 104 (product code 0563 0104) is a waterproof (IP65) food thermometer with a folding metal probe, developed for core temperature checks in the food sector. It measures in the range −50 … +250 °C; in the range −30 … +99.9 °C the accuracy is ±0.5 °C. Its non-slip plastic-coated housing sits securely in the hand, and after measuring, the probe folds into the housing. It is used for spot-check measurements in production, storage and processing, in gastronomy, supermarket chains, food retail and industry. According to Testo, the instrument is HACCP and EN 13485 certified.

Core Temperature Measurement in the Kitchen, in Storage and at Goods Receipt

The instrument switches on automatically when the probe is unfolded and switches off when the probe is folded; if left open, it switches off automatically after 60 minutes. The illuminated single-line display shows the reading and the Hold and Auto Hold status. In Hold mode the value is frozen when the button is pressed; in Auto Hold mode, if the reading remains stable for 10 seconds, the instrument gives an audible signal and fixes the value automatically. The stored maximum and minimum values can be displayed and deleted with the button. The unit of measurement (°C / °F / °R) is selected with the switch in the battery compartment.

The colored adhesive strips supplied with the instrument can be stuck to the inside of the battery compartment cover to mark which department or employee the thermometer belongs to. Thanks to its IP65 protection class, the housing and probe can be washed under running water; only neutral household detergent is used for cleaning, and if necessary it is disinfected with an alcohol-based spray. Since the measuring tip is thin, it leaves only a small hole in the food.

Technician Tips

• Insert at least 23 mm: for an accurate result, immerse or insert the probe at least 23 mm into the product being measured. Continuous contact with food applies to the section from the probe tip up to 2 cm before the handle.
• Use Auto-Hold: in Auto Hold mode, when the value remains stable for 10 seconds, the instrument gives an audible signal and fixes the value; only Hold and Auto Hold values are saved to the min./max. memory.
• Mark with colored strips: in businesses that use more than one thermometer, stick the colored adhesive strips to the inner surface of the battery compartment cover to distinguish the instruments by department or staff member.
• Clean correctly: wash the housing and probe under running water and dry with a cloth; use only neutral household detergent, never abrasive cleaners or solvents. Follow the instructions for use of the alcohol-based spray for disinfection.
• Have it checked annually: thermometers used under EN 13485 require regular checking and calibration according to EN 13486; once a year is recommended. Do not leave the housing outside the −20 … +60 °C operating temperature.
