Testo 831 (product code 0560 8316) is an infrared thermometer that measures surface temperature without contact and is especially suitable for the food sector. Thanks to its 30:1 optics, the measuring spot diameter at a distance of 1 meter is only 36 mm, so even small surfaces such as yogurt cups can be measured from a certain distance. Because the 2-point laser marking shows the measuring area, targeting errors are avoided. It measures in the range −30 … +210 °C with 0.1 °C resolution; since it takes two measurements per second, temperature checks of pallets and refrigerated shelves are completed within seconds.

While the measuring button is held down, the instrument measures and the laser dots show the upper and lower limits of the measuring area; when the button is released, the last value remains on the display as HOLD, and the stored minimum/maximum values can be displayed. Emissivity is adjustable between 0.1 and 1.0. Lower and upper alarm values are defined; when these values are exceeded, the instrument gives a visual and audible warning. The unit of measurement can be set to °C or °F; the illuminated display lights up for 10 seconds each time a button is pressed, and the instrument switches off automatically if not used for 1 minute. It runs for approximately 15 hours on a 9 V block battery.

Technician Tips

• Measure the core temperature when the value is critical: infrared measurement only measures the surface; if there is dirt, dust or ice on the surface, the temperature of the top layer is read. If the value is critical, especially with food, verify the core temperature with a contact immersion/penetration thermometer.
• Do not measure air gaps in packaged food: with shrink-wrapped (stretch film) food, do not position the measuring point over air gaps inside the packaging.
• Wait when the environment changes: when the instrument is taken to an environment at a different temperature (e.g. out of cold storage), an adjustment time of approximately 15 minutes is required for accurate infrared measurement.
• Keep the measuring path and lens clean: there must be no dust, steam, moisture or gas between the instrument and the measured surface; do not measure with a fogged lens. Clean the lens carefully with water or with a cotton swab moistened with water or medical alcohol.
• Take care with the laser and electromagnetic fields: the laser is class 2; do not look directly into the beam. Do not expose the instrument to radiation from microwave or induction heating systems, static charge or sudden temperature changes.
